Fennel, Apple, Celery Spring Salad

With Spring season here, it’s hard not to notice all the greenery and super blooms that have been flourishing throughout all of Southern California. This salad  is my favorite “green” salad – refreshing, tangy, crunchy and light. The vinaigrette used for this salad combines fresh lemon juice, red wine and apple cider vinegar which compliments the ingredients.  This salad is perfect paired with a crisp flavor profiled chardonnay. Rice & Split Pea Chicken Porridge

January brought rain, snow and cold temperatures to California this year. But, as much as I love the cold, it also brings or can exacerbate illnesses. One day at work, I had a patient that was very sick and weak and hadn’t eaten for two days. Fortunately, this proved to be an easy fix when his sweet wife came in with one of his favorite dishes: chicken rice porridge. He ate it all up and had enough energy to get through the day. Spiced Sipping Chocolate

Whenever huz and I travel, it’s a joy for us to explore the country’s food, culture and history. This post is dedicated to a delicious memory I have of Madrid, Spain. Downtown Madrid was busy with people of all ages going out for late night eats and was surrounded by the landscape of European buildings and romantic lights. In the horizon, my eyes were locked on a sign that read “Churros con Chocolate.” It was love at first sight. The churros were made fresh-to-order, crispy and sugary with a chewy texture. When the churro was dipped into the chocolate, it made for a savory, crispy and sweet surprise. Continue reading

Walla Walla Apple Butter & Pumpkin Pancakes

I get excited when we receive goodies from all around the country. Recently, I received fresh honey crisp apples and homemade apple butter from my sister-in-law who lives in Walla Walla, Washington. I like to describe apple butter as “savory grown-up applesauce”. Her jar of Walla Walla apple butter was so yummy that I was inspired to pair it with pumpkin pancakes.
